He's very talented, and I've been following his goings on for years, and now, I finally got to eat his food again.<br />

</tbody></table>We started with 5 small plates, chef's choice. The arancini were stuffed with braised beef and mozzarella and were easily the best arancini I've ever had. The rice was amazingly creamy.<br />
The fried olives were good, but nothing amazing. The salt cod, the anchovies, and the polpette were fantastic. The man's always had a way with meatballs. <br />

It's March), our half-order of gnocchi with braised oxtail appeared. This is only my second time eating oxtail, my first being on stupid Valentine's Day at the celebrated Purple Yam in Ditmas Park. It think it's fair to say that was one of the top three worst eating experiences of my life, and even fairer to say the oxtail we had that night was disgusting. It just tasted gross. My friend wound up taking it home and feeding it to his dog. I'm not even kidding.<br />
Anyway, so I knew I had to remedy The Oxtail Situation. And Josh Ziskin made some damn good oxtail. The gnocchi was amazing, too. I believe it was toasted first. Or panfried. Added some nice complexity to the dish. Oxtail Situation remedied.<br />

Maria and I decided on the panna cotta. Not sure why, panna cotta always bored me. But you see that cookie up there next to it? That cookie was great. <br />

Now. I'm staying in tonight. I realized today I have been out every single night for the past week and a half, and I'm starting to feel a little unwell. So I'm trying to "relax" or whatever. Sitting still is not my forte these days. But look at me, I'm sitting in my apartment at 8:30 pm. I'm basically a monk.<br />

NYC restaurants sometimes have difficulty bringing the heat, so it's always a nice surprise when I find something actually spicy.<br />

</tbody></table>Yesterday, I met my friend Keavy in Union Square. I grabbed three bunches of greens and some Fuji apples from the greenmarket and convinced Keavy that walking home was a very, very good idea. I said things like, "You're gonna feel GREAT!", and "All we've GOT is time", and "Let's just walk for a little while and see how we FEEL". Also, I promised a beer at the end of our multi-borough stroll.<br />

I'm very tired. I went to the farmer's market yesterday and got this ^ lovely bounty. Beets, radish turnip, Fuji apples, kale, pork chops (!), garlic, shoulder steak, ground turkey, pasture butter, eggs, rainbow trout, sunchokes, AND shishito peppers. The dark, leafy green veggies were not in abundance, with the exception of some out-of-season hothouse lettuces, which I did not get.<br />
I started to walk home, thinking I would just hop on the train eventually, but I was having such a lovely walk in the sun that I just walked home via the Manhattan Bridge.<br />

I got about a quarter of the way and realized my fear of heights was kicking in. I just had to power through. You cant just stop on the bridge. I knew if I even paused and gave in to the fear, I might have a very very long walk off the bridge ahead of me. It was nice to not give in to the feeling.<br />

I got home around one thirty and had a couple of eggs and an apple (which did NOT mix well in my stomach - never again) and tried to take a nap. Later that evening I had a lovely sandwich from the famous Hana Foods in Williamsburg. I didn't really eat enough yesterday.<br />

Today was a cooking day. I wanted to cook enough food for the next few days, so I didn't eat out and spend money, and also so I would eat well.<br />

Boiled a couple of tomatillos and threw them into the blender with some hot pepper, cilantro, basil, parsley, a garlic clove, salt and some evoo (fuck off, we used to use that word in restaurants way before rachel ray). Needs some work, but still a tasty sauce.<br />

Dinner was a big ol' burger from Hope and Anchor in Red Hook with a friend. It came with a salad, which I didn't eat because I disliked the dressing very much, and fries, of which I ate about a third. I shared a piece of banana cream pie with a friend. All I wanted was lemon meringue, but my friend told me it wasn't meringue season, which though untrue, is hilarious, so I accepted this statement. Although I think I'm going to need to learn how to make lemon meringue pie MYSELF since it is so hard to FIND.<br />

I walked home from work (1.2 miles) and prepared to roast a chicken. <br />
I've had some mixed results with chicken - Costco's organic chicken being the worst (no real surprise) and D'Artagnan being the best, but harder to find. <br />
So I asked Scott Bridi from Brooklyn Cured to recommend a good quality chicken and he told me about Bell and Evans' Giannone chicken at Los Paisanos (butcher shop in Carroll Gardens). <br />
So picked one up and buttered the hell out of it.<br />

So, while it was roasting, I went and jogged about 3/4 of a mile around my neighborhood. And learned something.<br />

Then a came home and did a quick routine with weights, and some pushups. I don't really have a plan yet for the weights, but will soon. I just wanted to get moving a bit today.<br />

It was moist and delicious and garlicy and the veggies were nicely caramelized. <br />
What I've learned about roasting chickens:<br />
Definitely use (pastured) lard on the root veg, and cook the chicken on a pretty high heat. It won't burn; these Fancy Chickens are much smaller than regular grocery store chickens, and can take the heat. <br />
Also, your veg won't really caramelize if cooked in lard unless the heat is high (at least 450) because the smoke point of lard is so high.<br />

This may be my last chicken for a while though. I might be getting a little sick of them. We'll see. <br />

She wasn't. I also had two Kumquat Cupcakes. They have peanut butter in them. What was I to do.<br />

Ok SO. Now that the pleasantries are out of the way I can talk about what I really want to talk about.<br />
<br />
The other day, I was at a friend's house I rarely go to. I remembered that way back towards the end of the summer I weighed myself on her scale. <br />
I was kind of horrified. I don't think I'm ready to start telling the blogworld my weight, but it was the most I had ever weighed in my life. <br />
So, the other night I got back on that scale. I now weigh 20 pounds less. Sure, some of it must be stress, and the fact that I was sick for 3 weeks. But clearly some of the changes I've made in the way I live my life must have something to do with it.<br />
I've been struggling with smoking, and with winter, and with motivation lately so this couldn't have come at a better time. To review:<br />
<br />
- I'm exercising. Not a ton, but way more than I was several months ago. I jogged a bunch of the way home in a snowstorm the other night. No one I know was even out in that storm, and there I am jogging in a tire track.<br />
<br />
- I'm eating A LOT better. I've found an eating style that seems to be working well for me. Most of what I eat I base off a site called <a href="http://fitnessspotlight.com/">Fitness Spotlight</a>, which balances paleo-eating principles with something totally crazy called moderation. When I'm home I eat organic 90% of the time, very little dairy, very few refined carbs, lots of veggies, fruit, lean pastured meat, and a fair amount of fat. I cook for myself a lot. When I go out or really have a craving for something I basically eat what I want. More on that in another post. Oh and it should be noted that I used to eat ice cream AT LEAST twice a week. Next week I'll be able to say I haven't had more than one bite (at the Stanton Social waddayawantfromme) of the stuff in four months. Not that I won't ever eat it again. I'm just saying that's how much better I'm eating right now.<br />

- Still struggling with smoking. Oy. OY.<br />

- I have yet to join a gym, which I've been saying I'm going to do forever. Sometimes I have trouble making decisions. My mother says I move at a "glacial pace", which is hilarious and accurate. But I have found a gym buddy! And we have plans to work out next week, unless I decide to go visit my family upstate in which case I will force my brother to work out with me (you've been warned danny).<br />

I've been promising a lot of things, lately, like also my New Year's resolutions. And that I'm going to join the gym.<br />
<br />
Well, if it seems like my my blog is kind of...spotty...that's because my BRAIN is kind of spotty these days. Big life changes (like breakups) can do that to you. I have a whole lot more time and space IN MY HEAD and although I like it, it can be hard to focus. <br />
<br />
But sometimes we have to round up the energies and point em somewhere. In this case, the delicious pasta with kale that I made. <br />
This may not seem like a big deal. Let me tell you why what I made was such a success:<br />
<br />
1. Often, when I try to do things "my way" or I "have a great idea" about how to change a tried and true technique, failure and chaos ensue. Like when I went through my cinnamon phase, because I thought it would be good in just about everything. That turned out to not be true. Yes, I am a former professional cook and have concocted some marvelous dishes. But I have also made some serious disasters. Ask my mother about the time I made potato salad for her birthday and used vanilla yogurt by accident. Oops.<br />
- the point is - this time my idea worked!!<br />
<br />
2. I am trying to eat more seasonally, locally, sustainably. I know this makes people's eyes glaze over when they see/hear those words at this point, even if they, too, are trying to do the same thing, so I try not to bore people more than I have to. And it in itself is boring. I've been eating a lot of squash these past few months. Swiss chard. Sweet potatoes. Rosemary. And yes, kale. This is not light food. You could temporarily patch the roof of your home with kale, if need be. You could hurt somebody with rosemary. It looks like something you could break off a tree and make your horse go faster with. That stuff is no joke. We're not playing with basil and thyme anymore, people. It is HEARTY. <br />
<br />
Anyway. So when I figured out a great way to use kale, I was very excited.<br />
<br />
I don't really have a recipe. I've made ziti and lasagna a zillion times and don't really use a recipe anymore. You can look one up and start from there.<br />
<br />
I had some grass-fed ground beef I need to use, and some ricotta, and some mozz. So, ziti it was. You don't HAVE TO steal your roommate's organic penne, but it'll taste better than the whole-wheat thin spaghetti you bought during one of your stupider trips to the grocery store. It will stay in the cabinet possibly forever.<br />
<br />
<b>Kyle's Non-Recipe Baked Pasta with Kale</b><br />
Put a pot of water on the stove. Big pot. <br />
I browned the beef, tossed in some chopped onion and garlic, and let those soften. Then I dumped in some canned tomato and some thyme. <br />
<br />
While this simmers away, your water has come to a boil. Throw a bunch or two of kale in there. You've cut off the ends of it where the very hearty stem/stalk is. Let that roam around in the pot for about 2-3 minutes. You want to soften the kale. You're softening this brillo pad of a vegetable is what you're doing. THEN you're going to scoop the kale out with a spider or a slotted spoon and let in drain in a colander because you're going to use the water again for the pasta. <br />
<br />
Bring the water again to a boil and salt it. You didn't salt it for the kale because somewhere along my culinary path in life I got it in my head that if you salt the water you're going to blanche kale with it'll make the kale tough. <br />
I'm sticking with it.<br />
<br />
Anyway, so cook your pasta.<br />
<br />
So while your pasta is cooking, you take your kale and dump it in your blender or food processor. Add maybe half a cup to a cup of your tomato sauce. It's ok if there's a few chunks of meat or mushroom or whatever you put in the sauce in there. You're just rustic like that.<br />

This breaks the brillo pad down into a tasty sauce. I also added a couple of tablespoons of ricotta to the mixture, which turned out delightfully. Add salt and pepper to taste.<br />

I only had one layer of kale sauce because I only had one bunch of kale. But next time, definitely two. Might as well get all the kale in there you can.<br />

It's filmed almost entirely in Brooklyn, so I spent a lot of time trying to figure out where exactly it was filmed (seems like Fort Greene and Park Slope). I also stared a lot at Jason Schwartzman's face and hair. I used to see him in DUMBO a lot and I always admired his hair. The steak was a grass-fed london broil (which is not actually a cut; I'm not sure exactly what cut it was, maybe shoulder), that I broiled, hence the name. I felt like I was playing 1982 NYC restaurant. The broiler is a weird item. The heat blasts down from above...I dunno. <b>No exercise.</b> I even took a cab to work. And from work. But I'm sick. Trying to nip this thing. A day or two more of great sleep and easy-doesing-it and I'll be a-ok. But even walking up my steps to my fourth-floor apartment leaves me wheezing right now. <br />

And I'm sick of it.<br />

I just took a Benadryl and will fall into a drugged sleep soon (hopefully).<br />
<br />

I am EXHAUSTED. And I haven't even DONE ANYTHING. I got up today, did some work, did some stuff around the house while listening to podcasts and things, went for a walk and did some shopping, and made and easy dinner for some friends. Watched a movie. But I'm exhausted because this stupid hacking cough keeps me up at night. That's my guess anyway.<br />
In the past two months I've smoked cigarettes three times. Not in the first month at all, but two times while I was out I had a cigarette each time, and one night I even bought a pack, one New Year's Eve. I smoked a couple. It had been a tough day and I was with a pretty lady who smoked anddammit if I wasn't gonna hang out with her.<br />
<br />
I know, it's not an excuse. That's not the point. The point is every time I've smoked I get sick again. So I've been sick for like a month. My poor immune system is trying to build itself back up and get used to all these changes I'm making and I'm not helping it. Well, not enough.<br />

Anyway, rant over. I woke up exhausted, like I said, and looked out the window to see I had no view of Manhattan. Snow.<br />

</tbody></table>A little later I had a snack of Fancy Cheese with some triscuits and some more delicious homemade preserves my friend Mandy made me who lives on Prince Edward Island. "Where did you pick the strawberries?", I asked. "In the fields", she nonchalantly replied. Uh, fields of strawberries. To a New Yorker, this is like the Tooth Fairy or clean streets. No wonder Anne of Green Gables liked it there so much.<br />

I ordered The Bark Dog and sat down. It was warm in their, with lots of wood, and a nice vibe. I saw they recycled just about anything and then I noticed that just about everything on their menu is locally sourced and/or organic, which explains why hot dog was $5. Yes, five bucks.<br />
I used to hate this sort of thing and role my eyes at it but over the last few months I've realized that good food costs more. Period. And I'm willing to pay for it. I also like that on the ACTUAL menu, nowhere does it say free-range, organic, locally-sourced, because everything is. It's the right thing to do. Basically, Bark is exactly the kind of restaurant I want to be eating at.<br />
So how was my Hot Dog?<br />

Well, I was kind of annoyed at the squishy white-bread bun, but I guess you can't really change that. It IS a hot dog after all. What are you gonna wrap it in, lard leaf (sorry, foodie joke)? It came with regular ketchup and mustard and brunoised red onion and a sweet pepper relish. Their is clearly excellent attention to detail at this establishment, and the hot dog was very fresh and unlike any Dog I've ever had. The sweet pepper relish was excellent. Was I blown away? No. Stupid Heinz ketchup got in the way of that delicious relish. But I'll be back. You can't judge a book by its first page. Not fair.<br />
<br />
Sew. I picked up another chicken and some potatoes and carrots and things and slid carefully home, as the sidewalks were beginning to freeze.<br />
<br />
I tossed the root veg in some pastured lard which immediately hardened again (I'm new to this cooking technique) and buttered up the nice, fancy chickens, and covered everything with thyme, inside and out, and sprinkled sea salt and pepper liberally everywhere. And roasted the hell out of it.<br />

I was feeling cluttered. I was sick, had just gotten back from a too-long, somewhat stressful "vacation" and was feeling worried that something was wrong with me.<br />
And then I took a walk. I walked two miles from the car rental place to the train station and then another two miles from Grand Central Terminal to the Whole Foods on Bowery.<br />

And I felt much better.<br />

This doesn't always work. I am a perfectionist and an over-thinker and as a result, dissatisfied with elements of my life on a constant basis. But getting moving DOES help. A lot.<br />

That was a few days ago. I took some much needed rest time and left my house today for the first time in two days to meet my friend Jay for dinner in Williamsburg. <br />

And tea. I had tons of green tea all day, which I've been drinking by the gallonful daily to try to get rid of my cold. It's not working.<br />

I did. On Sunday I decided to "beat the storm" and take the semi-reliable rental Mercury Tracer to Provincetown, MA for a week.<br />

I had only had a banana and was very hungry. We decided on The Squealing Pig, a lovely little pub. I love pubs. WHO DOESN'T LOVE A GOOD PUB?<br />

Then we took three hour naps because of the beer-with-lunch thing. Dinner was frozen pizza that we covered with broccoli.<br />

I wanted to have a nice long walk around town or in the dunes, but it's really pretty cold and very windy outside, so we stopped by the breakwater and made a nice moviefilm and then I went and signed up for a week's membership at The Provincetown Gym, the first gym I ever belonged to. There were five people in the gym this afternoon at 1 pm, and I am excited to have a relaxing week at anice, uncrowded gym.<br />

</div>I had a nice lunch of Salami and some dark chocolate and I'm getting ready to go watch the Sunset at Herring Cove beach, and then will head to the gym. I haven't really gotten any exercise in a week and I feel insane. I have to get moving! Ahhhhh!<br />
